Easy Sweet Red Bean Mochi Waffles

Moffles (mochi waffles) are crisp and airy with a chewy center. Made with soaked brown rice, they are a great nutritious snack.

INGREDIENTS:

  • 8 mochi blocks
  • Mentaiko cheese:
  • 20 grams shredded cheese
  • 20 grams mentaiko (spiced pollock roe)
  • Bonito flakes
  • Mentaiko mayonnaise
  • Nori strips
  • Pork kimchi:
  • 20 grams pork belly
  • 20 grams takuan (pickled radish)
  • Lettuce leaf
  • Kimchi
  • Teriyaki sauce
  • Adzuki:
  • 20 grams anko (sweetened adzuki bean paste)
  • 10 grams cream cheese
  • 1 scoop matcha ice cream
  • Kinako (powdered soybeans)
  • Kuri kinton (candies chestnuts)
  • Kuromitsu (Japanese sugar syrup)
  • Chocolate:
  • 20 grams chocolate
  • 10 grams almonds, chopped
  • Whipped cream
  • Dried berries
  • Mint leaf
  • Chocolate sauce


  • METHOD:

    Slice each mochi block in two.
    Place into a bowl and over with water.
    Microwave for 3 minutes or until soft at 500 watts.

    Place 2 pieces of mochi onto a waffle maker.
    Place other ingredients on top of the mochi pieces.
    Top with two more pieces of mochi.
    Close the waffle maker and cook for 10 minutes.

    Decorate with toppings and serve.
