METHOD:
Make the batter by beating the flour, baking powder and sugar in with the milk.
Add in the beaten egg and the mustard and season.
Add in the cooked mac and cheese and stir into the batter and add the extra cheese.
In a large pan on a medium and high heat, add in the butter and let this melt, making sure the whole of the pan is well greased.
Spoon in the batter making them as big or as little as you like and spread out a bit to make them perfectly round.
Cook for 3-4 minutes and flip.
Cooking for the same amount of time on the other side.
Fry off the bacon.
Stack the pancakes with the bacon and the maple syrup on the side.
Made this for a gathering last night. Everyone raved and asked for the recipe. I was almost embarrassed by how easy it it. Spectacular dish!
